Un-Classic Coleslaw

(for best flavor, let sit in the refrigerator an additional 15-20 minutes before eating)

Makes ~10-12 servings

What is Needed:

  • 1 Cabbage

  • 2-3 Carrots

  • 1 medium Onion

  • 2/3 cup Mayonnaise

  • 1/4 cup Yellow Mustard

  • 2 tsp Apple Cider Vinegar

  • 1 tsp Black Pepper

  • 1 tsp Salt

  • 1 tsp Garlic powder (optional)

What to Do:

  1. Roughly chop the cabbage, onion and carrots.

  2. Place sliced cabbage, onion and carrots into a large bowl (*Hint: use a Tupperware bowl with a lid - makes for easy storage and less clean-up).

  3. Add the mayonnaise, yellow mustard, apple cider vinegar, pepper, and garlic salt to the bowl.

  4. With a pair of tongs, toss all ingredients together until evenly coated.

  5. Taste Test: add in more of any ingredient to your satisfaction.

How to Finish:

There are SO many applications for coleslaw. Here are a couple of recommendations!

Plain: serve plain as a mid-day snack or as a healthy side to a meal.

Topping: serve as a topping for tuna salad, juicy burgers, eggs of your choice, wherever an added crunch is needed!
