Game Changers (pancakes)
(as named by our 8-year old son, Aaron)
Prep: 10 minutes Cook: 40 minutes Total: 50 minutes
Makes ~8-10 medium-sized pancakes
What is Needed:
4 oz Cream Cheese (room temperature)
2 cups Almond Flour
3 tbsp Erythritol
1 tbsp Vanilla Extract
½ cup Heavy Whipping Cream
2 Large Eggs
What to Do:
Preheat & lightly grease cast iron skillet (or non-stick pan, griddle, etc.) to low heat.
Using a whisk, combine cream cheese, heavy cream, and vanilla into medium-size bowl. Mix until cream cheese is fully incorporated into heavy cream.
Add in eggs and erythritol. Continue to mix batter until smooth consistency is met.
Add in almond flour ½ cup at a time to ensure proper thickness of batter is met to your liking (personal preference is thick & smooth, little lumps).
Pour circles onto preheated skillet. Cook until small bubbles start to form throughout. Flip and cook until browned on the other side.
Repeat with remaining batter.

Plate, top, eat, and enjoy!
